Pad Thai is a favorite Thai food for good reason. It’s a popular take away choice and a super easy recipe to make at home. The take away version isn’t always suitable for all palettes. This recipe however, is a family friendly version enabling you to control the level of spice for your little people.

Try this family Pad Thai recipe, with signature sweet- savory flavors, delicious tangy lime noodles and a sprinkle of peanuts.

As we are a nut free center, we substituted a couple of ingredients to cater for our children however, feel free to add in your own nut ingredients to suit your family.

Pad Thai is usually served with flat dried noodles, however we used plain 2 min noodles for our children.

Ingredients

  • 500g of chicken breast
  • 1 red capsicum
  • 2 carrots thinly sliced
  • 1 zucchini grated
  • 1 brown onion
  • 1 bunch of spring onion
  • 1 cup of chicken stock
  • 2 tablespoons of honey
  • Half a lime juiced
  • 2 tablespoons of sweet chili
  • 1 table spoon of minced garlic
  • 1 small knob of ginger (grated)
  • 1 tablespoon of chili sauce (more or less if needed)
  • Crispy shallots (substitute for peanuts)

Method

Once you have gathered all the ingredients the making part is very actually very straight forward.

  1. Cook your chicken breast until brown
  2. Add carrot, capsicum, zucchini, and bean sprouts and the rest of the veges;
  3. Add in the chicken stock, sweet chili, chili sauce, minced garlic , ginger and honey.
  4. Meanwhile cook the noodles in boiling water to the packet’s instructions.
  5. Once the noodles have cooked add them to chicken and veggie mixture stir through with sauce to combined it all together

Serve into a bowls add your spring onion and crispy shallots squeeze your lime juice on top and enjoy.
