Ham & Zucchini Pikelets with Cream Cheese

Not all pikelets need to be sweet! Try this delicious Morning or Afternoon Tea Snack!

Also great for lunch boxes. Gluten free option available.

 Ingredients

  • 2 cups SR Flour (optional gluten free SR)
  • 2 cups Milk (optional dairy free)
  • Two Eggs
  • 1 cup Ham off the bone, sliced or shredded
  • 1 cup Zucchini, grated
  • Butter, for frypan
  • Cream Cheese, spreadable

 Method

  1. Add flour, eggs and milk to a large mixing bowl, whisk until combined.
  2. Once combined, stir in chopped ham and zucchini
  3. Heat fry pan to medium high heat, add a small dollop of butter to coat the pan
  4. Add small scoops of the mixture to the pan, and flip once bubbles start to appear
  5.  Once cooked, serve on a plate with some cream cheese spread on top!
