Red Lentil Pasta

Red Lentil Pasta is a quick family meal. Lentils are often overlooked, even though they’re an inexpensive way of getting a wide range of nutrients.

Lentils are full of antioxidants, phytochemicals, vitamin B, magnesium, zinc and potassium

This dish can be served warm as a main or as a side salad.

Ingredients

  • Two cups cooked red lentils
  • One tin diced tomatoes
  • 1 grated zucchini
  • 1 grated carrots
  • 600ml cream
  • Two cups broccoli
  • one can corn
  • A bag pasta of choice

Method

  1. Cook lentils prior to starting dish, once lentils are cooked drain and add to fry pan.
  2. Start cooking pasta in separate pot.
  3. Add all other ingredients to fry pan, bring to boil.

Once pasta is cooked drain and add to fry pan with lentil ingredients, mix all together and serve.
