Red Lentil Pasta
Red Lentil Pasta is a quick family meal. Lentils are often overlooked, even though they’re an inexpensive way of getting a wide range of nutrients.
Lentils are full of antioxidants, phytochemicals, vitamin B, magnesium, zinc and potassium
This dish can be served warm as a main or as a side salad.
Ingredients
- Two cups cooked red lentils
- One tin diced tomatoes
- 1 grated zucchini
- 1 grated carrots
- 600ml cream
- Two cups broccoli
- one can corn
- A bag pasta of choice
Method
- Cook lentils prior to starting dish, once lentils are cooked drain and add to fry pan.
- Start cooking pasta in separate pot.
- Add all other ingredients to fry pan, bring to boil.
Once pasta is cooked drain and add to fry pan with lentil ingredients, mix all together and serve.
