Who’s up for a Berry yummy Crumble ? The days are starting to give us a little taste of summer, but nights can still be a little chilly. What could be better on a cool night than a warm toasty dessert after dinner?

This scrumptious ‘Berry Crumble’ is perfect for a family of 4 but can easily be made to feed more.

This dish can also be enjoyed as a breakfast option or even afternoon tea snack to sustain you until dinner.

This recipe is best served with a dollop of coconut yogurt but would go well with any type of yoghurt or custard for a warm nourishing treat.

Ingredients

  • One x 600g pack frozen berries
  • One cup oats
  • ½ cup plain flour
  • 1 tsp cinnamon
  • ¼ cup sugar (any kind – white/brown/coconut)
  • ¼ cup desiccated coconut
  • 1 Tbsp butter, softened
  • 1 Tbsp water

Coconut yogurt, to serve.

Method

  1. Preheat oven to 180 degrees.
  2. In a saucepan, add your frozen berries and a tablespoon of water. Mix together and bring to the boil on medium-high heat.
  3. Once boiling, turn off the heat and mash together slightly using a potato masher.
  4. In a separate bowl add the oats, flour, sugar, cinnamon, and desiccated coconut and mix together well.
  5. Then add the softened butter and use your fingers to mix/blend the butter with the oat/flour mixture, ensuring all the mixture is crumbled together evenly. If you need to use slightly more butter, simply add more until texture/consistency is to your liking.
  6. Add the mashed berry mixture to an ovenproof tray or dish and sprinkle over the crumble mixture.
  7. Place in the oven and cook until the crumble on top is golden brown – this will take around 5-10 minutes
  8. Serve with coconut yogurt
