Creamy Avocado Pasta

This Creamy Avocado pasta is a great vegetarian option as it a great source of healthy fats to fuel little bodies.

This dish can also be topped with cheese or served cold as a pasta salad.

It is very versatile and can include meat options also, such as bacon or chicken.

Ingredients

  • Two ripe Avocados OR frozen bag
  • One large cooking cream
  • 1 zucchini
  • Corn kernals
  • Cherry tomato punnet
  • Basil bunch
  • Juice of ½ lemon
  • Pasta – any type ( option zoodles- spiralized zucchini)

Method

  1. Blend avocados, basil and lemon juice in food processor to make a sauce.
  2. Heat in fry pan
  3. Add grated zucchini, cherry tomatoes, and corn and stir together
  4. Add in cream and let simmer
  5. Meanwhile cook pasta to al dente
  6. Stir cooked pasta through

Serve top with basil for garnish
