With the warmer months approaching, this frozen yogurt blueberry slice is perfect for an easy afternoon snack, on a hot day.

It will leave your little ones licking their sticky little fingers and lips.

This fruity and delicious sweet treat is fun to make, uses only 4 ingredients and takes no time at all!

It can be modified to suit anyone’s needs and can be kept in the freezer, in an airtight container, for up to 2 months.

You can make this with any yogurt you like! You can also substitute vanilla yogurt for Greek, adding a little vanilla extract, honey or maple syrup to sweeten. You can also use any fruit you desire.

Ingredients

1 x 250g pkt Arrowroot Biscuits

100g butter, melted

1kg tub vanilla yoghurt (or any yoghurt of your choice)

1-2 cups frozen (or fresh) blueberries

Method

  1. Blend arrowroot biscuits in a food processor
  2. Transfer to a bowl and add the melted butter
  3. Mix well, then press down firmly into a slice tray lined with baking paper
  4. Place tray in to the fridge or freezer for 30 minutes to set
  5. Once set, pour in the yoghurt and spread out evenly
  6. Sprinkle the blueberries over the yoghurt and gently press in to yoghurt
  7. Place in freezer to set
  8. Once set, take the slice out with the baking paper attached and cut in to small slices
