Lasagna Soup
As we are now heading into the start of winter and its already becoming a bit chilly, this recipe is perfect to whip out when you want an easy, hearty weeknight meal.
Plus, who doesn’t love lasagna all year round anyway? You get all the flavours in a comforting soup form! It’s loaded with beef, tomatoes and Italian herbs and the melty cheese just takes it over the top.
No layering or waiting around your oven! Simply throw all your ingredients into your pot and you have easy Lasagne Soup ready to be served whenever you are!
If you feel like comfort food in a bowl on a cold winter’s night, then this is the perfect recipe for your family.
This may seem a little long of a list of ingredients, but a lot of it is pantry staples you likely already have.
Ingredients
- Olive oil
- 500g lean beef mince
- 1 x brown onion, diced
- 1 x carrot, grated
- 1 x zucchini, grated
- 1 tbsp minced garlic
- 4 ½ cups chicken stock
- 2 x can crushed tomatoes
- 2 ½ tbsp tomato paste
- 1-2 tbsp Italian mixed herbs
- 400g bowtie pasta
- 1 cup mozzarella cheese
- ½ cup shredded parmesan cheese
- 1 cup ricotta cheese
- 2 tbsp fresh parsley, for garnish
- Salt and pepper
Method
- Heat one tablespoon olive oil in a large pot over medium-high heat. Once hot, cook beef mince until browned. Add salt and pepper to season. Drain fat from beef and set beef aside.
- Heat another tablespoon of olive oil in pot, add diced onion and sauté until it begins to soften, about 3 minutes. Add in garlic and sauté 30 seconds longer.
- Add in chicken stock, crushed tomatoes, tomato paste, grated carrot and zucchini, Italian herbs, browned beef mince and season with salt and pepper to taste.
- Bring just to a boil, then reduce heat to medium-low, cover and simmer 20 minutes.
- Meanwhile, cook pasta in a separate pot according to packet directions, then drain.
- In a mixing bowl, using a fork, stir together mozzarella, parmesan and ricotta and set aside.
- Stir cooked pasta into soup and mix
- Ladle soup into bowls, dollop with a large scoop of the cheese mixture and sprinkle with chopped parsley (cheese will melt well once stirred into soup).
